1) 5600G+3080 vs 5600x+3080 combo, the 5600G+3080 is on the same performance level as a 3700x+3080 in 1080p gaming, and closes the gap in fps when compared to 1440p with 5600x still outperforming. I highly recommend you check the review if you consider buying the G variant. Gamers Nexus has a very good video on this if you want to know more.
2)If you only have $200 to spend on a cpu, and you are upgrading from a 1k, 2k or any of the last G series, then yes by all means, upgrade if you have the money. With that said you will be getting better gaming performance, just not on the same levels as a 5600x, but better than what you had before.
Final Thoughts: Compared for what the 5600x current pricing, the G variant is the better buy at the micro center price (that's if you live close enough to snag it for that price) if you are upgrading from a sub 3700 series. You will basically have a 3600 desktop workload, with a 3700x gaming core load. If you already have a 3600 or 3700+ series then you wont be seeing much performance gain in both desktop and gaming and would be better off when the 5600x drops in price where the performance gain is much more significant. Your money so spend it however you want it in the end. We can compare all we want but its you who should make yourself happy. If you think you want to make the upgrade, do it by all means.
