Correct me if I am wrong, but it seems like there aren't any eligible items that are anywhere close to $75.
Edit: I purchased a set of headphones not on the promo page and the $75 back posted to my AMEX.

Both cards have the offer saved correctly. Any thoughts on why I didn't get the second for the order last night?
It's probably one per account, not per card. I would cancel the second order.
Note: As long as they actually put the $75 on the GC, per some other posters prior experiences - however, others posters have reported putting the $75 GC towards their monthly bills already.
I think what people were saying is they made a $75 payment towards their monthly bill. Those people are going to be in for a rude awakening when they get their next bill since Verizon is going to take away they autopay discount for paying with a credit card.

I checked my wife's account and indeed in the redeemed offers it shows. But never got the email (not in spam, etc). Odd!
But it is already redeemed so I guess I'm good to go!

My third order was around 18 months after the first, and I thought surely it must have been resolved by then. I was wrong.
The weird thing is despite the apparent prevalence of this issue going back many years, no agent seemed to have ever encountered it before.
I don't know why they continue to sell these gift cards, but some people have no problems with their gift card orders. After the third order I vowed never to order gift cards again.
