Ok - I'm SOOO tired of studying!!!!!!!! My exam is tomorrow and if I don't pass this I'm just going to change professions. This is the major suck-o!! My head just hurts from memorizing formulas and ratios and calculations! OUCH Faint !!! But then I get to go buy myself a new car afterwards - that should be fun...

Rice. Now I want rice, not any rice but Carolina Red Rice. O.M.G. heaven on a plate (at least for me) starts with bacon..I know, it can't be bad with bacon, right? does anyone know anything about the BOGO degree deodorant cpn? It is worded like an 01 would be, but I can't confirm. I saw some nice gift sets today at T. (degree, Old Spice and Axe Whistling, among others etc. ) hopefully they are T friendly. Smilie

You asked for it laugh out loud Southerner's can take ANY healthy food and make it unhealthy in a snap...Here's the rice and a Tomato Pie recipe (so so good)

2 cups rice
1 can 12.5 oz whole tomatoes (or diced)
4-6 slices bacon
1 onion chopped
salt
pepper

I rinse rice first (helps to keep from sticking. I like sticky rice, but not for this recipe)
If using whole canned tomatoes, cut each in half and squeeze tomato juice out into bowl. Pour any tomato juice remaining in can into bowl. Add enough water to make 2.5 cups liquid.
chop tomatoes, set aside.

Fry bacon in pan, remove when done.
Add chopped onions to bacon grease and caramalize.
Add white rice and sautee until shiny (but not browned) (also helps keep from being sticky and gives a good texture/flavor)
Add liquids, tomatoes, salt and pepper (this is also where I add the cooked sausage)
Bring to boil then reduce to low and cook with lid on for 10 minutes. Remove from heat and let sit for 10 minutes (don't open the lid or you'll stop the cooking/steaming process)

Fluff it and serve. You can crumble the reserved bacon and sprinkle on top yummy


Another FAVORITE southern dish: (sounds iffy but oh so good)

Tomato Pie:
4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion ( I substitute vidalia onions here, or even yellow onions)
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Directions

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

I almost went into Psychology - It was too depressing though look around - that's why I went for my Masters in Change Management (Organizational) - Psychology at the corporate level.... I don't have enough patience to be a Psychologist.... I could see me now... "look dude, she dumped you - get over it.
