I have eaten these nearly every day for the last 1-2 years. They are a healthier alternative to regular pancakes and taste good (optional: add a pinch of cinnamon if you want). Obviously dousing these with Syrup or using a lot of butter will not make these "healthy." So for those more health conscious, I would recommend eating these with a small amount of syrup, sugar free syrup, or PB fit peanut butter that is a bit runny.
Ideal cooking instructions for me is 1.7g water : 1g pancake mix. This comes out to about 3oz of water to 1/2 cup mix. The instructions on the box have it at 1 cup water to 1 cup mix which is 240g water to 106g mix which will make these WAY too thin.
1. Add water to dry mix. Limit mixing to preserve CO2/promote rising
2. Let sit for 5 minutes. Preheat pan on medium
3. Add tsp of butter to the pan.
4. Add batter to pan. Let it sit for ~5 minutes. You should see the batter bubble slowly as CO2 escapes. (It should barely sizzle. If it sizzles a lot or if you smell butter burning, turn down the heat).
5. Once the top no longer looks wet (it should look dry), flip it
6. Let sit for 5 more minutes. Rotating it in the pan every couple minutes.
7. Turn off heat and flip again to reheat the other side and let it sit for 1-2 minutes.
The result should be a fluffy-ish pancake that is crisp on the exterior but slightly cakey in the interior. It shouldn't be that dry unless that is your preference.
I tried Walmart self checkout. The coupon scanned but the coupon amount was $0.00. So no discount with scanning by myself. The cashier would not override it. Hope others have better luck.

What stores will take this coupon? I don't think that Walmart or Target will.
I have used printable free item coupons at Kroger and Publix in the past. YMMV. I would suggest just using a single coupon so you don't raise any flags and maybe buy something else to go w/ it. Maybe Kroger affiliate stores would work too.
I literally eat them everyday. The chocolate chip and dark chocolate mixed are amazing. We've also had the buttermilk option before, but everyone in our house likes the chocolate options better (of course).
Kinda worked at Kroger self-checkout. Had to have the attendant manually enter it after a few minutes of pointing out (several times) that yes I grabbed the correct product and yes it rang for less than $6.99.
Just tried to use at self checkout at Walmart in central Pennsylvania. Mix was 5.29 and the coupon worked BUT deducted 0.00 - Even the attendant was confused. She manually reduced the amount of the mix from the total bill for me.

This is interesting info from someone with that much experience. We use the mix from costco every sunday , usually alternating pancakes and waffles. Agree for pancakes the box has you do way too much water. (Waffles, at least in my iron, need the full cup to be their best, otherwise too dense.)
Unlike you though i whisk the heck out of it to get rid of lumps and immediately pour... I was under the impression that letting it sit was not good. Im not sure why, i guess just because it starts to look different. Will have to test your tips, i think this is pancake week.

the science behind it is that over-mixing can lead to a chewier texture. You want to mix just until the water/flour is incorporated — some lumps are fine. The resting time is there to 1) evenly hydrate the flour which will dissolve some of those lumps and 2) allow the leavening agents time to distribute/react. This promotes a better/more even rise.
After a few minutes of rest the batter should look a bit different with some pockets of air.
With all that said, the methods are far less important than the water/flour ratio. That will have the biggest influence over the end product. I have made these using your method and the results are fairly similar. For some, the extra time/steps may not be worth the relatively small improvements in texture. It's worth a try though! Hope you enjoy!
