It's true the experience is diminished by the lack of camera but the point is you can still try and have fun. The movement is "tracked" by the joy con's movement. But to demonstrate how useless it is, you can stay seated while waving the joy con around and still pass.

Not individual DLCs but "Unlimited" which is like a season pass that gives you access to all of the songs not included in the game from an online list; it costs about $25 per year

You can use your phone as the camera. It'll ask you when you start it up.
