It's not an expiration date, it's a "best if used by date" that doesn't necessarily represent the quality on that magical date.
And since you want to do math, that's 272cal a day, which isn't that much for the small amount of pistachios you have to eat to get that.

I have 3 unopened bags of these in pantry, if I don't intend to eat them anytime soon, do you suggest keeping them in fridge or freezer? Best used date by dec 2022

Yes, fridge or freezer will keep them fresh longer. The colder the better. Airtight container
