Got an Ooni last time it was FP. Really like it. Got the Ooni Stack and it does an amazing job of raising the dough. I tested it by comparing a regular glass bowl with plastic wrap over the top vs. the Ooni Stack. The Stack did so much better. Dough really expanded and was fluffly vs. much less so in the glass bowl.
Don't know why but if you are looking at accessories I would rate that up there with one of the better ones to buy. Doesn't take up muck room in the fridge either. Seems expensive for what it is, but it does work much better.

I don't own an Ooni but I make neopolitan style pizza on my Weber kettle.

The only real essentials are a wooden peel (for building and inserting pies) and a metal peel (for turning and extraction). Wet dough will stick bad to metal. Wooden peels are too thick to easily get under cooking pies.

I will also recommend pizza screens. You're going to be slow building pies to start. If you put the dough on a screen you can practice the motions at your own pace and not worry about the dough sticking to the peel. Otherwise, pressure is on to build fast, build light, and nail your hydration. overloaded pies aren't as big a deal, either. And if you have younger kids making their own pies, screens become essential.

Build pie on screen. Insert into oven. Once the dough is set, use metal peel to get pizza off the screen and onto the stone. The end result is a crust a tad softer than going right on the stone and most people wouldn't notice the difference. For kids, they'll probably like the softer crust that comes with using a screen the entire cook.

I also use a dredge shaker to sprinkle flour. Makes it really easy to get an even application. They're cheap and really handy, though not really essential. You can always unevenly apply flour by hand.

EDIT: I should have said that a scale is essential to making dough. Measuring dry ingredients by volume is imprecise and it will cause you to have inconsistent results. Look up the Americas Test Kitchen list and buy one of their recommendations.

In for 16 after Amex CB. Had already used my offer to buy my mom one as a gift last month so luckily my husband had it on his card. Close as I'll get to the Costco price and ordering direct from Ooni extends warranty to 3 years.

It is okay. I had it for a bit, but ended up liking the Epicurean peel better (from bed bath and beyond). I was able to build pizzas on it and launch much cleaner than with the Ooni perforated peel.

You can buy perforated peels on aliexpress that are better for $25-30. I bought a 16" and a 14" on there for uber cheap. Turning peels also cheap.

Wood is better for launching as it sticks less and you need less flour

Edit:

Karu 16 is by far the best oven ooni has ever made (in terms of how even it bakes) and this is the lowest price ever for one. It's never been on sale before. Ooni also has 60 day price adjustment so if you purchased in last 60 days you'll get an adjustment.

Ace hardware is 30 days so they will adjust as well

If you have the money buy the karu 16. So much better (I have owned all of them) with the gas burner and I bake at max flame 100% of the time. Flick it on and never touch anything.

Also it's never been on sale before so 20% off is a great price. Only way to get 20% off is to open a store credit card which is too much work

I believe if you email ooni support they will give you a 10% off code. Not sure if it stacks.

They offer a 10% healthcare worker discount but will not issue new codes during the sale. They said after the sale they will send a 15% if you ask. If you already have a code, not sure if it stacks.
