I read some complaints from people who kind of expected nonstick performance from steel. I don't have any issues with steel. Just apply enough oil or butter. If you got sticking residue, let the pan soak a little bit and then use a little plastic scraper and it easily comes off. I never use any metal spatula or metal abrasive pad on my steel cookware for residue. I think it will cause scratches/scuffs. Never needed metal abrasive pad. Plastic pan scraper is what I use for cast iron and stainless steel when I need it. Plastic scraper won't scuff up a pan.

I'm just an armature cook but i can definitely say stainless pans and pots are amazing and as you mentioned, following those care instructions will REALLY help. If I made a super greasy dish I would let the pot sit with a drop of dish soap and water until I'm done eating and it all comes off so easily. When I don't clean it soon after making eggs then it's impossible to remove, I've thrown out a lot of stainless pans because of that. I've just stopped eating eggs lol

My eggs never stick. I use steel pans. I use oil or butter. Listen to this lady. I mostly make omelets though. I use much less oil/butter than her. Eggs cook so fast that it doesn't have time to stick for me.
