8GB RAM is more than enough for any non-professional. The MacBook Air is designed for portability and those professionals looking for more memory may want to look at other options in the MacBook lineup.

I know 2 years warranty is included by just buying from costco but not sure about the 2 additional years.
I don't see 4 years or additional years listed on either of these sites.

Wife's maxed out 16 inch macbook pro from 2017 is sluggish as hell while my 7 year old MSI laptop on Windows that was half the price of MBP is still running just fine.
There are a ton of great Windows machines that are at least as durable as macs, often better.
At the same time, the basic model of macmini NEVER gave me any issues at all - idk if its because of that 1 extra core or better cooling system.
I really want to get this for portability, like you said it's GREAT for travel, but the sluggishness and sub-par display are not making me happy.
Another point to consider: 256 gb on macmini is very usable as you can always put a stationary external drive and call it a day.
256gb on the laptop though is very little, and bringing external drive everywhere you go is no fun
