One main reason MTB/gravel riders upgrade to 1x (one by) drivetrain is to simplify the derailleur adjustments. This bike can be upgraded to 1x later, but would require upgrading the rear hub/wheel. There's nothing wrong with 3x drivetrain on this bike. In my opinion, 1x is more of a quality-of-life upgrade, others might tell you 1x also saves weight.

Also, it doesn't look like you can adjust the height of the handlebar. Is this normal? I haven't rode a bike in over a decade but I vaguely recall being able to adjust them like one would adjust the seat.

You might be referring to the older threaded or quill stem where you could make some height adjustments in the head tube insert. Most modern bikes have threadless stems, although you could still find quill stems on some very cheap bikes like the Huffy Granite they are selling. Modern threadless stems can still adjust height by adding or removing stem spacers under the stem, as long as you have enough room on the exposed steerer tube. Other ways to adjust bar height include stems with a rise, or adjustable stems, and bars with rise.
Good call, that is a great deal! I've bugged them so much they now ask if I read their previous emails they sent me on my options. Which is cancel for refund or wait 2-3 weeks. I might wait a bit longer because they seem to not have any idea what's going on, maybe support is all out sourced with limited tools on stock.

I'd have to cut the seat post to make it shorter if I wanted to make it any smaller/shorter.

EDIT: also smooth out the sharp edges after you cut the seat post so it doesn't score inside the seat tube.

I've tried three times now to swap out my 20" to a 18" frame when I see them in stock on my phone and they wont do it and then tell me there is no stock any place.
NVM it now says in stock on the computer. I'm going to try and chat again with someone.
