One main reason MTB/gravel riders upgrade to 1x (one by) drivetrain is to simplify the derailleur adjustments. This bike can be upgraded to 1x later, but would require upgrading the rear hub/wheel. There's nothing wrong with 3x drivetrain on this bike. In my opinion, 1x is more of a quality-of-life upgrade, others might tell you 1x also saves weight.

From Google there doesn't seem to be agreement on where on the top tube to measure stand over height, some say midpoint between the front fork/stem and the seat tube, some say as close to in front of the top tube you can get right after the front of the seat ends, both being places where you would stand. On this bike, the difference between those two points is a pretty big difference.
I looked around on the bike and can't find any markings indicating model number, size, measurements, etc... but maybe I missed them?
Also, if you haven't used it yet, online chat bot is frustrating AF. Call them.
EDIT: After I got off the phone with them I received a Camping World Cancel Notification email indicating that they were canceling my order "as requested" and issuing a refund to my account. I called them back and told them I made no request to cancel and was just asking if they had an ETA on the backorder. They said they can't reinstate the order because they are out of stock and that I shouldn't have canceled. Good times. Best of luck to everyone else!

Framed sizes the bike based on the crank to top of seat tube (not including the seat post itself). If the tube measures 16" you got the 16" bike. Given your height I'm assuming the 18" or 20" is what you want.
