There's an empty M.2 slot, which can accept a 2280 form factor "gumstick" NVME SSD (but not a SATA M.2). Spend $40 more to get one & make it as the system drive. It will greatly improve the performance of this laptop.
The 1TB "old" HDD could be kept and used as media storage…

Still tempted, but barely use the current laptop (2010 i5 2540m based asus w/8gb). Mostly when traveling, which doesn't happen often anymore.

12GB is pretty good for most users. NVMe is a must.
Also, NVMe SSD is generally faster than a SATA SSD 2.5", so you will possibly regret sometime later for not spending a little bit more for better performance.
But of coz, if you already have a spare SATA 2.5" in hands, it's good to have a try. It will probably use less power instead of spinner+NVMe.

Edit: my preferred layout is separate physical drives to boot either win10 or Linux, with yet a 3rd physical disk for "common" and/or shared stuff. It's been working well for me since the Lenovo e570 deal about 5 years ago
