Adding a NVME SSD is almost the first thing you need to do with this machine.

There's an empty M.2 slot, which can accept a 2280 form factor "gumstick" NVME SSD (but not a SATA M.2). Spend $40 more to get one & make it as the system drive. It will greatly improve the performance of this laptop.

The 1TB "old" HDD could be kept and used as media storage…

You don't need to. License is linked to bios. So just switch drive and reload windows.

Yes, that was an amazing deal and mine was going strong until I let it get "very" wet (long story - lol). I've since ordered a couple of used ones from ebay to try and make a fair recovery (maybe even 2?)with all the pieces / parts that I have for that model. This HP deal came up as I await receipt and it's time for a fairly decent upgrade anyway, so I pulled the trigger on this. Shame I let the e570 get wet, it's been a truly dependable and solid unit.

What basic NVMe would you recommend for this laptop?
The goal is to use it to host windows system files, and make the laptop faster. This is for my old parents who are not gamers.
I am thinking of either this -

A brand new Kingston 256GB should be good enough for what you need. A Samsung refurbished is faster and bigger, but possibly an extremely used.

If you want to make sure it's not stupidly difficult with ribbon cables and other junk in the way, try looking up the model to see if anyone has done a video guide on it.
You will also need a plastic sponger to get the clips loose that hold the case together. These are standard fare on modern laptops, and are easily broken. There are different length screws under the rubber bumper that must be removed to open the case.

If someone didn't want the hard drive in the laptop, they could probably remove it and place it in an enclosure.
HDD also good for backups (before MS 2nd Tuesday updates).
