Imho, the M1 air at the 999 (and sale price of 8-850) was a good deal, but it's too hard to excuse 8/256 in a $1300 laptop.
I will be completely honest in saying that while using my MacBook or Dell XPS laptop, I don't notice that one is any better (performance-wise) than the other. They run different OS's but the MacBook definitely isn't night/day better than the Dell or vice versa.
With regards to minimal RAM and swap to SSD, we'll see how the SSD wear is on that Mac SSD in a few years vs a system with 16/32GB RAM, where swap to disk is minimal. And while SSD is fast, RAM is magnitudes faster.
Having the flexibility to upgrade RAM or SSD is great. Buy small, pay less to upgrade yourself compared to giving Apple 10X more money for the same thing and having it fixed in there for life.

For me, spending $180 for 8GB of RAM and $200 for 256GB of SSD is a very different experience. But it's definitely NOT a better one! Not sure who should be embarassed more -- Apple for charging those prices or buyers for paying those ridiculous prices for upgrades.

16 GB on a Windows machine mean nothing when compared to a Mac. Quality, performance and optimization are the attributes that you are likely missing.
I'm no IT guy but I know that M1 and M2 are a game changer and they even use the ram differently, to a point where for most users, the amount of ram isn't very important due to almost instant swap and access to SSD and CPU.
If you are a professional, the cost of the upgrades on a Mac will be worth it and not a problem for you.
Otherwise you probably don't need those upgrades.
Most have no idea what RAM even is...maybe a few more know about storage, mainly because they have experience filling up their phones with videos and downloads.
And virtually all those buyers are very happy with the Macbooks.

M1 was at Costco for $850, still a solid machine at that price with all day battery life
MacOS certainly has plenty of quirks, and while the M1 is a good processor, without a hibernate mode, I find my 13 MBP actually lasting less than my prior Windows laptop -- given I only use it an hour or two per day. My Windows laptop would hibernate and I'd come back a day or two later and I'd still have almost the same battery life remaining, meanwhile my Macbook has drained 15-20%.
Some people are married to the Apple ecosystem, and that's fine. But in 2022, charging $1300 for a computer with 8/256 is a complete ripoff. That's where my issue lies. The original M1 Air was a good deal when on sale. But the higher end models, and/or any upgraded RAM/Storage get into the realm of F-U pricing.
For day-to-day usage, something like this below would be more than enough for 95% of people. More RAM, more storage.

M1 macs can be put to sleep by closing the lid. I can put it to sleep for virtually an entire work day and when I open it back up it lost like 3% battery power.

also lol at your macbook pro apparently losing 15-20% while its asleep, you have a crypto mining virus on a mac (somehow.) if you leave a m1 mbp open with the screen on and turned off sleep altogether it wouldnt even lose 20% in 24 hours, thats how efficient they are.
