So I use a TV as a monitor and its on its way out. The Rtings review says its good for that but it is only 60Hz - should I wait until a smoking 120Hz deal comes and hope my current TV hangs on or snap this up. FYI I dont play FPS style games so I dont know how use Id get of a 120Hz screen, just thinking about the future.

120hz over 60HZ is absolutely going to be what you want, in gaming it makes a huge difference!
Thoughts on this vs waiting for the U6G to drop again? Mad I missed it for $349 earlier this week..
U6G is much better, wait for it to drop. Since U6H is out I'd expect it to have more drops in the future. I would try to wait for Costco to have the U6GR on sale again for the extended warranty, if Roku is ok. They did it for $430 with a $100 Costco Card, which is similar to $350 depending on your taxes. I think it's currently down to $400 in store.

My Hisense 50H8C that I bought back in 2018 (I think) is still going strong. I use it for my main monitor. 4K@60 will be fine if you're not doing hardcore gaming. And I think anything with native 120Hz (not the fake one you see on most) will probably cost you an arm and a leg at these sizes.
