Another thing you could try is to create a new Google Voice number on a dummy Google account and linking your cell number to it (thus unlinking it from your main GV number). Then after you port the new GV number to Fi, you can re-link your cell# to your main GV number. Shouldn't be an issue as you can unlink and re-link your cell# to your Google Voice number easily.
You can't port out a number from the Mint mobile 1 week trial sim ($1 - $5 at various locations). You could use it to get another GV number and port that to FI.
Or you could use the boost mobile 1 month trial (https://slickdeals.net/f/15885721-boost-mobile-first-month-5gb-5g-4g-lte-free-sim-0-99-tax?attrsrc=s...) or the Ting $1 sim; or Visible $5 for 1 month

Activate the phone on a new full service plan (data-only SIMs do not qualify) within 30 days of the shipment confirmation email and keep the qualifying phone active on Google Fi for 120 consecutive days..."
