Is 1TB enough? I do use an external 4TB and it's been fine, but load times for GTA are insane...literally 4-5 minutes. It's the only game I really get irritated with.

There is a recent firmware issue that has come up with this drive that is leading to a significant amount of failures. This is similar to a firmware problem they had earlier when they changed controllers (from one SMI to another). But that glitch was relatively benign in that the drive worked but had some incompatibilities with their storage executive software and with third party storage managers using SMART, etc.
But this one seems to be leading to premature failures (most evident when some people use them in large quantities) of a significant percentage of them. Cause is unknown but likely related to a controller change, It might be related to incompatibiliy with certain SATA controllers on the host and so the failures may be limited to those.
The firmware version that seems to be common with this failure is M3CR043. So check your SSD for firmware if you order this. There doesn't seem to be an update yet. Like before this firmware is only used with the controller change. So, if you receive one with a different firmware series than the above, it is likely not affected.

Not to imply all of them will fail but Crucial does a poor job of communicating when they have issues like this.

For 2.5" SSDs, Samsung is regarded as the top dog with Crucial close behind. Crucial MX500 is generally ranked just below the Samsung 860 Evo. They were released roughly around the same time with similar specs. The MX500 does have a lower TBW limit (amount of times it can be written to), but honestly, it's incredibly unlikely that you will reach the limit. The Samsung 870 Evo is an update to the 860 Evo. It essentially just has a better controller if I remember correctly.
Concerning speed, SATA SSDs have reached their cap a long time ago. You would not notice a difference between this Crucial and the Samsung. Personally, I consider $5 to be a reasonable price for a better controller from the top 2.5" SSD manufacturer. Both are great SSDs. Both would serve you very well, but I would go with the Samsung. Unless, it is $150 for 1TB which would be a terrible price!

FYI, the sustained speed of the 870 is better than the MX500

And, no doubt the 870 is better; however, I'm not sure if there would be a considerable difference in real world proformance. It is worth it for a $5 difference in my opinion.
