I wonder if you can freeze these. I buy roti frozen but those have some fat in them
Store-bought tortillas typically retain quality for about a week beyond the printed date if you store them at room temperature. If you refrigerate them, that period lengthens to between 2 weeks and a month, depending on the brand.
They will keep for months in the freezer.

I am weird and I keep four different types of tortillas in my freezer. I take them out one at a time as I need them and haven't noticed a quality drop off after several months in the freezer, and I'm kinda snobby about that stuff. I did notice corn tortillas don't hold up as well, but flour or low net carb tortillas do

Last a very long time in the freezer. All beans are cooked in an Instant Pot. Soak in water overnight. I have about 20 burritos in the freezer right now.

someone at my work has left an open package of tortillas in the fridge for well over 6 months and there's no sign of mold yet.

You'll have to keep checking until the middle part is warm/hot. I think total about 3 mins. Also, flip it once, midway. Then put in toaster oven until lightly toasted. This is all to your preference. It will be very hot like hot pockets. Taste great with sriracha sauce. Forgot to mention use cling wrap to cover burrito individually then freeze.
