Anyway, I have a hard copy of this book and it's pretty good. For me, the Acid section was easily the best chapter. My mind was constantly blown by the mechanisms of acidic ingredients in recipes. Absolutely fascinating.

This book has a lot of great info, and I would generally recommend it. It is geared more for teaching folks how to pivot so you don't need to strictly follow recipes to get tasty results. I have cooked for many years and have taken a formal cooking course and still found some nuggets of new/helpful info.
I've borrowed it from the library and felt it was pretty worthless as a cookbook. Okay reading but not worth keeping around the house for ideas.
In enjoy cookbooks that teach you a little bit of theory behind the practice. It's good to know why you're doing what you're doing when putting a dish together
