Also for those wondering, there's something wonky going on with attempting to apply GCs to this. I applied $100 and it seems it's discounting not off the total price but off some combination of the "promotional" price post-trade-in discount and the total price of the phone.
Unfortunate part is you have to pay full $499 + tax upfront and then send back trade-in in a trade-in kit (sent to you by Google). They will refund you once they receive the phone.
At least I will be able to transfer all my data and wipe the phone in the comfort of my home.
They will always give you sealed box for activate later option. Nowadays even for activate now option they give it to you in sealed box if the rep is cool but its YMMV though.
