I'm tempted, but one of my sisters already did an Ancestry test and if I don't match I don't know if I want to carry around that information while my parents are still alive.

If I want to buy this for my wife and I do I buy just an extra DNA kit and share the world explorer? Or do I need to buy two subscriptions? Also do the subscriptions start immediately or can I gift at Xmas?

Not really. Ancestry will need your real information to process the payment. You could probably keep your identity from other users, but not Ancestry.
