30W is not really overkill for iPhone 14 series. While the official statement from Apple is that iPhone 14 series can charge up to 20W, independent tests have shown that it can draw up to 25-27W. So yes a 30W charger will charge faster than a 20W charger for iPhone 14 series. For earlier iPhone I think the limit is actually 20W.

I measure with a Kill-A-Watt, I imagine he's using something similar. Actual charge rate will be a little lower due to account for conversion inefficiency in the charger.
