Once some people learn about the effects of the animal industry, they don't want to support it anymore. It has nothing to do with taste or Texture it's just that we are caring more about the planet and the future of humanity than our own personal desires. Food companies have been able to pretty much perfectly mimic the Taste and texture so there's really no reason to put money into an industry that is destroying the planet faster than any other one.

"Vegan beef" or "vegan chicken" would seem to sound as appealing to a vegan as "vegan human" would sound to a typical meat-eater.
I want vegan protein products to taste savory, but not like animal flesh. I wish that more of the food producers would realize that.

I think there are plenty of old-school subs for you that fit your wishes.
My wife and I do appreciate them mimicking the flavor profile as well as the meat texture.
Many of our vegetarian meat products would fool me in a blind taste test. We are very grateful for the new-school meat subs.
We like meat, just not the raising and harsh treatment of animals to get it. I am not even a vegetarian, I just like many of her dishes. I get the principles. All that said, this won't be the meat substitute we are looking for.
The entire package only has 4,000 calories and the main ingredient is textured soy protein. Dried soy beans cost less than a dollar a pound, with 50% of their dry weight being protein. This is 2 pounds 5 ounces and costs 15 dollars while being on sale, they are essentially selling you bean flour from the cheapest bean out there for 7 bucks a pound while spending 2 bucks or less to make it.
For real meat I would happily pay this price. For essentially ground beans? Nah.

yeah it's pretty simple to understand that being farmed for meat is not a happy life, but people have trouble learning about what's real or not. all those anti-vegan zingers keep them innocent of farm animals manufactured misery. probably not actually a good feeling.

Cattle raised for beef typically start their lives grazing in pastures, but while they have some freedom to live naturally during this time, they are not free from harm. Many are forced to undergo painful amputations such as dehorning and castration.
After around six or seven months of grazing outdoors, the majority of cattle are moved to facilities known as feedlots, or stockyards, to be fattened up before slaughter. The sheer size of factory farms means that while only a small minority of feedlots are large enough to be considered factory farms, these facilities produce 80 to 85 percent of the cattle finished in feedlots. Around 40 percent of fed cattle are produced by feedlots large enough to hold 32,000 or more cows.
What Are Cattle Fed in Factory Farms?
In feedlots, cattle are commonly fed a high-calorie diet that includes large amounts of processed grains, primarily corn and sorghum (milo), to make them gain weight quickly. Feed often contains added vitamins, minerals, and drugs such as tylosin, an antibiotic given to cattle to reduce the prevalence of liver abscesses caused by their unnatural diet. To force them to grow faster and convert the food they consume into weight more efficiently, beef cattle also have steroid hormone drugs implanted into the back of their ears.
