What exactly make this type of knife better than the plastic ones at harbor freight?

Skip the plastic if you can afford it. Drywall mudding and repair does take some practice, just fyi. Plastic isn't going to give you the same flex when feathering. Also, these will last years with a little clean up after use.

Yes that's what they're designed to do as main purpose. For smaller patches I stick to one 12" to keep extra mud on and one 6" that is used for spackling the area. For bigger jobs mud pan becomes substitution for 12" and I usually switch to 8" or 10" as tool.
