Does the 4k edit make Gollum CGI look dated?
He seemed totally natural in the original dvd version but it seems more apparent he is CGI when I watch the bluray. I have held off on picking up 4k for fear that it will accentuate this even more.
Not necessarily. I know the T2: Judgment Day 4K wiped a lot of the detail through DNR, making the Blu-ray the best way to watch it.
From what I understand the biggest reason to upgrade to the 4K version of the LOTR trilogy is the Atmos mix.

The specific version of LotR in this thread is from 2021 and are advertised as remastered, so I don't believe it's a simple rerelease of the 2011 blu-rays. It stands to reason that these versions are just 1080p versions of the master used to create the 4k discs, as I can't see them putting in more work beyond what they already did for the 4k discs.
Anyways, I like the 4k versions of LotR a lot. For me personally, (excessive) DNR typically only bothers when it's done on movies from the 80s or earlier.

I'm a big LOTR fan and I've always preferred the extended editions, but recently I rewatched the theatrical editions for the first time in years and honestly I think they're better movies. The extended editions offer more for fans and are certainly enjoyable, but the pacing is better in the theatrical editions. Many of the added scenes slow things down without adding much to the story, or in the case of Aaragorn rallying the Army of the Dead, it kind of ruins the tension at Minas Tirith.
Obviously the extended editions are still great for fans, and they add some depth and fun scenes, but it's mostly unnecessary from a film standpoint and in many cases simply throws off the pacing. The one scene that I absolutely think shouldn't have been cut from the theatrical release is the death of Saruman. Leaving that plot hole open seems like an odd choice. Would be great if there were a followup short film for the Scouring of the Shire, but it would require a big budget and never would work in reality.
