This knife will most likely be more used than your chefs knife. It's lighter and easier to use. I have a set I purchased maybe 15 years ago or so from Macy's. These German steel knives last a lifetime.
I picked up the "ZWILLING PRO 7-INCH, HOLLOW EDGE SANTOKU" Twin Dude forged version of this knife last year for $70 (normally $190, and sales on these are pretty rare because they are so popular I think), and while the construction is different than the stamped knife in this post, the basic blade shape is the same. I agree with the other posts, I use this knife a lot more than the large Twin Dude Chef's knife that used to be my go to... I still use the Chef's knife for big meat carving, but for any other chopping, dicing, etc., a santoku is way better than a Chef's knife imho...

They do! I have a couple of their knives that I was gifted around 1990. I put them in the dishwasher several times per week and sharpen them on my Ken Onion sharpener a couple of times per year. They still work as well as they did when they were new.
