Just FYI this is the 3 tier/stage which is helpful for minimum height, which is what I was looking for and someone who is shorter.

HomeDepot has birch plywood (if you want to trim and finish your own) among other types of plywood suitable for a table top. If your not into the extra work, they also have butcherblock surfaces, as well as nice wood tabletops meant for work benches that would work nicely.
IKEA used to have inexpensive solid wood table tops, but have now gone to lighter "honey comb" interior material. Lighter, not as strong as solid wood. And would probably work for most people that don't do more than type and put their coffee cup on a coaster. Cheaper than the solid wood ones from Home Depot. Edit: a reason NOT to recommend them is if you need to put screw holes that are not already in the pre-drilled locations. If you put them someplace else, the surface and honeycomb interior may not be strong enough to hold screws over a longer time. I wonder if there is a technique, such as drilling the holes needed and filling the holes with epoxy, then tapping them again, to reinforce your anchor points?
Edit: here's a couple inexpensive ones that are at lest 30" deep.

Top should arrive in a couple of days and the frame in the next week, so I cannot comment on the quality. The top weights about 100lbs, so I think it will be pretty solid. Good luck!
