You can use a DisplayLink dock, which my M1 works flawlessly with three monitors, but my M2 does not. I use these for office work, no gaming or photo editing.
Both M1 and M2 MacBook Air/Pro can support one external display.

Happy with M1
Quite a while back I was able to build an I7 overclocked hackintosh that was faster than anything Apple would put out, for less than half the price, and it worked flawlessly.
These days, the OS doesn't work (without some serious hacking) with the latest Intel generations, and the performance benefit vs. Mac Mini isn't exactly impressive.

When I did build a few Hackintoshes, I realized it really wasn't worth the time/hassle. Things just stop working randomly, have to do weird updates all the time. It's fun for a hobby, but considering a MacBook air is $799 these days, it's not worth my time to screw around with a computer that randomly works.
