Absolutely. While it is a generation old, it's still a top 5 CPU for gaming, and more than enough multi-threaded performance for most users. This build should easily last you 5+ years.

But performance aside, this is a great value. The motherboard is worth around $200, the 12700k $300, and RAM $40. So $540 of product for $350.

As a 13900k/3090/DDR5 owner, if I didn't have the need for what I have now, I would have picked this up in a heartbeat (maybe two!).
The processor will still chew up anything you throw at it and I have the z790 version of that board for my 13900k and it is wonderful; packed with good connections and options.
I'd wait for matching RAM to go on sale and then buy at least one more stick but being that RAM is so cheap now I would rather get three and max out the board.
This setup calls for an air cooler if you want stability. I've got a Noctua NH-U12A for mine as these professors are very hot and hard to tame but that fan is like half the price of this system and I think you can be aas with a lower cost one. I would look at the Noctua D-15.
Get the biggest GPU you can afford and throw it into a Fractal case (I love the Torrent) and you're not only good to go, but you'll lead the pack for years to come.

I have been eyeing this CPU for a while. I currently have a 12th gen i5 on a b660 board with 32gb of ddr 4 ram, but it struggles with video editing (I film my son's hockey games using 4 camera angles and merge them into one file that follows the play). I try to edit at 2x speed, but once the buffer empties, it become unresponsive or slow to respond to camera changes. I have tried using proxies and that helps, but does not eliminate the issue. I also am into astrophotography and want to get Pixinsight which can be a bear on resources. How difficult would it be to swap the mobo and cpu? Plug and play? Would I have change a bunch of settings? I have built a computer before and that was not too difficult.

The only issue I'd have is with the Gigabyte MB. The Realtek® 2.5GbE LAN chip is a huge problem for me. I avoid Realtek networking stuff. But for someone running MS-Windows, perhaps it doesn't matter?

Since almost all upgrades on Intel systems require a new motherboard, the future upgrades don't really matter, just assume it will be $200 + whatever the CPU and DDR5 RAM costs.

We are all at the end of the DDR4 RAM cycle. This is not the time to be thinking about future upgrades for most people, even those with Ryzens, unless they have a 2xxx Ryzen and want to move to a 5xxx Ryzen CPU. Then it is purely a CPU upgrade - no need for a new motherboard or RAM.

I currently have the 13700k with Gigabyte z790 Aero G, perfectly working, maxing out all benchmark so far.

Yep - that's the consensus - 2 sticks are better than 4 because of stability issues with some boards and it's easier to push higher memory speeds and lower CAS latencies with fewer sticks. So if you wanted 64 gigs of DDR 5 - much better to get 2 sticks of 32gb vs. 4 sticks of 16.

They just recently changed the MB bundle to Gigabyte. They had an Asus MB since Nov. before. I picked it then but didn't have the memory included. Asus board has Intel lan and 4 NVME slots, but have worse audio chip. Realtek 897.

Only if going to overclock, for regular system does not really matter and common user wont notice differences.
If overclocking, yes, 2 is better.

I have this exact CPU/Mobo combo that I bought back in 2021, but with 32GB of DDR4-3200Mhz RAM instead.

For the price to performance, this is a great deal. The first few months I had no problems with the motherboard and RAM when enabling XMP, but after about a year, the motherboard decided to randomly not want to boot unless I set my RAM back to default settings of 2666Mhz. A BIOS update didnt fix it. I eventually fixed this by manually adjusting the voltage a notch up so the RAM received more power, my PC started booting again at 3200Mhz RAM settings.

The thing I like more about this motherboard compared to the Asus TUF one is that this has another 4 rear USB ports, which I really need for all the things I have connected to my PC.

It's a mid-range board and there are better ones out there, but for this bundle, it's a great mobo IMO.

Are you sure it's the cpu that is the bottleneck for the editing? I'd recommend watching the process monitor to see if it is cpu, memory, or even disk. Since you are using a 12th gen cpu, there's a great chance that you could install the fastest nvme SSD in a Samsung 990 and get benefit there if you don't already have one.

I upgraded exactly from that CPU and I was using Gigabyte Z97x- Gaming Motherboard. hahaha From 2014 or so... I consider upgrading at this point and hook the RTX 4070 from a previous RX 580 i used. hahah
