So Costco puts this one on sale but the newer Mini 3 (which they just started carrying) is NOT on sale. Has anyone tried both that can comment on if the Mini 3 is that much better than the Mini 2?

i have both. the mini 3 is much better than the mini 2.
pretty ok drone.. i crashed this shit on day 1 gimbal messed up. wuh wohhh
not at all unexpected. this drone has no obstacle avoidance and if you try to fly it like an airplane instead of controlling it like a "drone" then a crash is highly likely. in my experience, many who "crash it" do so because they try to fly it around as if it were an fpv which won't turn out so well.
Probably not important to most people but because this doesn't have Remote ID, this can't be used legally for any kind of commercial use beginning September 2023. The Mini 3 does have remote ID.
This will continue to be fine for recreational use.
For $60 more I'd get the Mini 3.
Although I wouldn't buy either without the Fly More Combo -- 2 extra batteries.

not entirely true, you can attach a external rid module to the mini 2, register the drone, and then use it commercially after 9/2023.

Depends on how often you plan to use; if you plan to use often then get mini 3 otherwise mini 2 is sufficient for a quickie.
