manual defrost does require you pull out everything and use a plastic scraper to remove snow buildup. but it only takes a couple minutes to pop out the chunks.
if you are freezing meats, cover with olive oil and put in a zip loc freezer bag. quart or freezer sized. squeeze air out. this will keep your meats/poultry/pork good for well over a year (lot longer tbh). been doing that for 30 years. or use a vacuum sealer.
modern vacuum sealed meat packing from the store is generally good enough.
Edit:
In the heat, freezers work harder than normal as the compressor cools the freezer's internal environment to combat the outside temperature. In extreme cold, the compressor will not kick on until the external temperature is higher than what the freezer is set to. Garage ready freezers are built to handle both extreme heat and cold.

auto defrost causes freezer burn a lot quicker. melts, pulls moisture out, then refreezes. if you rotate out food in under 3 weeks auto defrost isn't an issue.

I think garage ready units have more insulation around the components to work better in fluctuating environments like a garage. Don't know if it's marketing fluff or not
