I think pork shoulder is amazing if cooked low and slow. Chicken thighs are underappreciated in the States. For instance, for fried chicken in some other countries they actually charge extra for dark meat and let you substitute chicken breasts free of charge for drumsticks and thighs. For beef: brisket, London broil marinated, and chuck roast for pot roast.
They have some lower quality cuts of meat compared to regular Costco, but also cheaper. This is the same meat that many restaurants serve, so still good. Of course, you might be able to beat those prices at the local supermarket if you catch them on sale.

In terms of lower prices on meat in general, you should check out Costco Business Center if you have one near you.
