Geez
- They take a while to come to temperature. You need to preheat them for a few minutes.
- They will not be "non-stick" until they get very hot.
- Stainless is very conductive and it's important to use the right sized burner on your stove. If you use one that's too large it will super-heat the sizes and cause carbon staining.
Otherwise stainless is fantastic and I use it all the time. I have that famous Emril set from Macy's from 15+ years ago they were clearing out for $99 that turned out to be rebaged All Clad. I use the 8qt pot for all my soups/stews, the 10" pan is great for chicken breasts, and I saute mushrooms and shallots in the 8" pan. I use those Scotch Brite stainless steel scrubbers on them- they don't scratch and take any scortching/carbonization off with little effort. Other than a few battle scars and dents, my set is still shiny and looks great.

I've only ever bought it through these sales on here. Twice now, both occasions I've been more than happy with what I received. Most of the time, I can't even find a real defect.
I've mostly purchased the D3 stainless stuff. In my amateur experience, it's definitely a bit more clean up than using Non-Stick, but I'm making an effort to get better. I do also have their 8" / 10" Hard Anodized Non-stick pans, which are my daily beaters. They are still working good after a year or two, but I am noticing the edge/lip of the pan is showing some wear. I do not blame them for it, as I suspect it is from me putting them in the dishwasher and the abrasives in the detergent is basically sand blasting the pan.
I just ordered another 8"/10" Hard Anodized Non-stick set-- among other D3 stainless pieces, that I will stash away for when my current ones "wear out" and I think going forward I will try to hand wash them as the site suggests.
