You'd need to use a (supported) USB 3 gigabit ethernet adapter to go along with the single internal but you should be able to do so if you wanted without jumping through too many hoops assuming you're not running a home data center demand wise. (USB is generally not designed for 24/7 heavy use...)

It may be possible to replace the Wi-Fi card with an M.2 to Ethernet adapter.
MAYBE possible, but it wouldn't look pretty, you'd have to run a ribbon cable outside the case and just have an extra ethernet port hanging there. And the extra hardware would cost you like.....$50-ish? There are other mini PCs with a dual NIC and the same processor available for under $200, just save yourself the hassle and get one of those.
For PFSense ideally you want one specific thing: a dual Intel NIC, meaning it has two ethernet ports and the controller for them is Intel. 90% of the mini PCs with dual NICs on Amazon have Realtek adapters, so you'd be better off running OPNSense, which handles Realtek a bit better than PFSense.

N100vs n95 is not as obvious a choice. As the numbers normally are you would expect clearly better performance with the n100 in every way, it has lower TDP and can N95's higher 15W tdp can translate to higher sustained performance if notebookcheck comparison is accurate. The igpu appears larger, while I did not see data on what happens with the 6W overall budget.
The 16GB/512GB version has also $60 coupon and 5% off. Not sure if ram is soldered but if it is then double ram and storage is worth $50 more IMO.
For these for my use anyway I think 8GB is fine. Thing is this is a mid to low end processor, so I think 8GB fits it well. It's not really powerful enough to pair with 16GB IMO. The processor is going to bottleneck you anyway (not a terrible processor btw)
I have 16GB in my desktop Pc I built myself a few years ago, the other day I checked in task manager and websurfing/youtube (all I ever do) it would go to right at ~8GB and never go above. Even when I tried to stress it by opening three 4k youtubes at once. I think 8GB is still fine for mainstream use, save the $50 IMO. Another tell that 8GB is fine is flagship phones still often come with 8GB or at least an 8GB version.
But that said there is a trigikey with same specs for 115 after coupon. Usually at Amazon there are several listings very similar so check around.

Defiantly good as a router or a Media Streamer, though if you want a machine with some gaming power onboard get a Beelink SER 6 or 7 Max or an Ace Magician with a minimum Ryzen 7 5800U + 8 core graphics.
Oh and always remember to wipe the Windows 11 Install on this machine as most of these boxes come with iffy services installed. What I did on mine was do the Windows 11 reset function but also include the "Clean wipe" which takes longer since it wipes the drive as well but you in the end get a super clean version of Windows 11 without the iffy services.

How well-supported are these no-name mini PCs? Who issues the BIOS updates, if any?
BIOS updates seem to be more and more important for internet-connected PCs these days.
A cheap refurb Dell mini-tower is probably a better bet for long term support
