Not a whole lot outside of using Echelon's Fitness app unless you decide to try to modify the tablet. I did that for the Echelon Connect Sport-S from a Walmart deal a while ago, but it's a lot of work and frankly I wish I had the model without a tablet like the EX-3 to use with my own tablet.
That said, the bike itself is a great exercise bike for the price and has enough resistant for what most people probably want/need.
I bought the EX-5s with the 22 inch screen from the first Woot deal. If I was to do it over, I'd buy the screenless version and use a cheap (Fire) tablet or phone.

You would need subscription to access its features.
I have EX5s with 10" and I can access all classes without subscription. I have never updated the echelon app, the only downside is the app does not keep track of my activity. I am using Strava so it doesn't bother me as much.
This is an incredible price for an incredible bike. Use it with the QZ app and you have a fully functional Peloton bike with Auto Resistance. Highly recommended.

I did this on the ex5s, been awesome w $13/mo Peloton digital sub and the qdomyos-zwift app.
Doesn't the 13$ subscription only let you do three cycling classes a month?
