Stainless comes with cell and a better glass. Stainless can also be resurfaced but heavier.

I have both. A steel Series 7 that I wear throughout the day, and an aluminum SE that I use to track my sleep and workouts.

The steel looks and feels more premium IMO, with a little more heft to it, especially on a stainless steel bracelet. Some might see added weight as negative, but being used to conventional watches, it feels right to me. But that's all subjective. The only functional difference is the steel version comes with a sapphire crystal that is more durable than the glass crystal on the aluminum version. (Though, in over a year of daily wear, I haven't managed to scratch either.)

Also, cellular comes standard on the steel version. It's an extra cost option on the aluminum models.

What's the benefit of steel? The software updates are gonna slow it down anyways and you have to upgrade it in a couple years.
