This bundle is a very good value if you are looking to build a brand new budget tier system for gaming. The 5600x3d is only slightly slower than the 5800x3d in gaming, but it only has 6 cores instead of 8. The best price the 5800x3d alone has been is $260, so this bundle having a decent board and ram for only $10 more is great as long as you don't need those 2 additional cores. Most games won't take advantage of more than 6 cores, but if you're playing the latest AAA titles it may become something of a bottleneck, particularly in the coming years as UE5 becomes more prevalent.

Here's a link to hardware unboxed comparing the 5600x3d and 5800x3d with a rtx4090 across 26 different games at 1080p, 1440p, and 4k: https://www.youtube.com/watch?v=kpG4UoWihEg
At 1080p using a rtx4090 (the best case scenario for performance scaling to be shown, and an extreme example for a low tier set of last gen components like this) the 5800x3d is on average 6% faster than the 5600x3d in average fps, and 5% faster in 1% lows. The actual performance delta when paired with a more rational gpu, like say a 6800xt, will be significantly lower than that already minor 6% difference. While there are certainly games that will be bottlenecked by only 6 cores, that is currently more the exception than the rule.
With regards to streaming and processing video, you are correct that a 6 core cpu becomes a major limitation. That being said, if your use cases are more cpu intensive than simply gaming and you're building a new pc, then the last gen x3d chips on the dead end am4 platform aren't a good option period. If you require high multithreaded performance, you'd be better off looking at either intel 12th gen or later deals, or amd zen 4 deals.
Creating a computer with a similar (likely lower end but still acceptable) motherboard and ram and the 5800x3d would probably cost around $100 more assuming you bought all the components at good sale prices. At this price tier, putting an additional $100 towards the gpu as opposed to the cpu would yield an improvement in fps far superior to the difference between the 5600x3d and 5800x3d.

Seems ok deal esp for budget gaming build where you cant throw another $100 at it.

but for me I7-13700k bundle with double ram for 349 seems better.
the extra 80$ is somewhat offset by coming with 32GB ram and ddr5> ddr4 of course.
is faster even for just gaming.

The 5600x3d performance against 5800x3d is worse from 5% to 15% on certain games and resolution. Anything more than a 5% is not considered slight in gaming. Compromising is the real game. The 5600x3d is for the bigger L3 cache but at a loss of 2 cores/4 threads for other games/applications. If you play more cpu intensive games like Total War, this cpu will not be a consideration. Also if you live stream/process video you will better off with an 8 core cpu.
