NOTE: This is still the most expensive instant-read thermometer out there, but it tops every review/ranking of thermometers because, among other things, it's faster than others, more accurate out of the box than others, and more waterproof than others.

The Thermopen ONE is IP67 waterproof and gives consistent final readings in under 2 seconds.

The cheaper Thermapen Classic is also great and will no doubt be available for less than this by Black Friday. That one is only water resistant, and gives an accurate temperature reading in 2-3 seconds.

FWIW the most intriguing bargain alternative is the Thermopro Lightning [buythermopro.com] which is on sale for $38.49 with free shipping, (and it's been as low as $30 before). It's almost as fast as the Thermapen One, and has a 10-year warranty, though it's not as water-resistant as the Thermapen (IP65 water-resistant vs IP67 waterproof)., and some reviewers say they had to calibrate it to get it perfectly accurate.

So I saw the price and had to find out why oh why someone would pay in some cases ten times the price. I googled up and found the below... even with the explanation that it's more accurate. I cannot see how a degree or two in improved accuracy would make much difference. Half the time things will still continue cooking and change temp in the minutes after removing from heat due to residual internal and cooking surface i.e. pan heat. Then it will drop just as fast minutes later. Perhaps candy making demands more accuracy but that's just a random uneducated guess. But then opening the door to oven or removing lid to check temp completely changes up timing and temps as well. So paying for such accuracy appears to be a fleeting moving target that a degree or two will never result in much of a payoff worthy of the cost.

Yes, there are a ton of reviews like this including many that do more thorough testing, and while the Thermapen ONE isn't leagues better than the competition, it still comes out #1 every time. I agree with you that for most cooking, a degree's difference in accuracy isn't a huge deal, but the difference in speed is a big deal to me, such as when opening the oven door to get a quick read on whether the roasted fish is done, or standing over a flaming hot grill. And the waterproofing makes it easy to keep clean and less prone to damage.
