PS4 version is consistent 60fps on ps5. PS5 version has lots of frame drops, it's noticeably choppier.

I feel like I remember reading that some folks preferred the PS4 version of this even if they have a PS5 but I'm not sure why, does anyone have any idea what I'm talking about here?

Apparently PS5 has some stuttering and slow down, while PS4 on PS5 runs consistent 60fps. Reports vary about the extent. Seems to have gotten better, but it still exist. PS4 has free upgrade to PS5 though

Yes - provided a more consistent experience with regard to performance. I think patches have fixed that.

No you don't. PS plus is for non-fremium online gaming, cloud saves, and various tiers of game subscriptions.

I farking hate Dark Souls. I tried the PS5 version for a few days and as a working adult I don't have time to iterate over and over. Should I bother?

Yeah, I'm in the same boat. I want to like these games because they DO look fantastic. I just don't have the time or patience to "git gud" for these, especially when I've got a ton of other games in my backlog that I don't have to worry about frustrating the hell out of me.
