In my opinion, the first game is the most difficult in the series, especially if you want to do all the optional Alfheim portals. If you are not a hardcore player, those optional levels can get tough. Some of the levels with quick-time events haven't aged gracefully, but that's a minor issue. Most of the game still holds up very well.
The second and third games are much easier than the first one. Those are great as well (you'll have to play them on the Switch though).

If I already own the 360 version of Vanquish is there any reason to buy the Xbox one/series version?

I have this and Vanquish on both 360 and remastered versions. While the remasters certainly look much better, I'm somewhat disappointed. Could definitely do better. No reason this game is not in 4k 60fps. Fun games though and just my opinion
Amazing game and blown away when I first played years ago on 360. Best $10 spent
