That's the thing with soup. They took the salt, fat and meat out of it and then wondered why sales fell off. Because those are the things that make soup taste good.
A great chowder is just cream, butter, salt, pepper and some seafood. We're just trying to put a little fat in it with the butter, or a big dose of umami with the lobster base.
