Venice is especially hit hard, which is why they're starting to restrict tourism despite it being their only real economic driver. In fact, Venice is so overrun that there's nearly nobody who lives on the islands anymore - it's all hotels and tourists in the entire city, and it has no resources to deal with the crush. If you're trying to see local life, it's not just difficult there but impossible as there's no such thing. Nearly every store left is a tourist souvenir shop or crappy restaurant (the food in Venice is generally junk compared to other cities). Rome is a close second to this, although local life is outside the historic core.
Rome is essentially Disneyland - one attraction after another. It's not a real city, it's a theme park. And between the attractions, the walking, food, and cultural delve is crap. It's a C city with A+ attractions.

Rome wasn't built in a day. Nor should anyone expect a quality experience in just one day.
Speeding thru a place would be much better accomplished in Japan. Precision and efficiency are part of life. Italy isn't like that. Rome is much more than a series of attractions and is nothing like Disney. If you think the food is crap, then you obviously have not spent any energy finding food.
That being said, I'm a total spaz and have used day trips or layovers to see more in one day than most do in a few. I'm really, really good at this stuff.
