Coffee contains cafestrol, the most potent chemical we have found at increasing blood cholesterol levels. It is removed by paper filters, but if you use a mesh filter/french press/etc, expect your cholesterol levels to surge by A LOT. (The current theory is that it inhibits bile production, but they aren't 100% sure). They discovered this in the 1990s, but no one seemed to care because nearly all coffee consumed in the 1990s was paper filtered.
It matters, but not as much as your overall consumption of fats and carbs.
People with high cholesterol should absolutely be monitoring their consumption of cholesterol.

Dietary changes that can affect cholesterol are limiting processed carbohydrates and potentially saturated fat to a degree. There is still considerable debate as to whether elevated cholesterol levels actually increase the risk for heart disease. There are always outliers and unique situations, but I doubt 30mg from a protein shake will have any impact especially when most people consuming protein supplements are physically active and that is the number one preventive measure you can take for CVD.

Optimum Nutrition is labeled gluten free but their website suggests it may contain cross-contamination with gluten.
