To me a mandolin is all about convenience. They're easier to store and access than food processors. I use mine mainly when I need sliced or julienne cuts. They're great for potatoes, tomatoes and onions. The one I have makes diced onions and peppers very easy as well (never have tears either) I think if you have good knife skills they may be little value except when you have to prep a large volume of say scalloped potatoes.
A lot more control and more uniform results. Easier to clean typically. If you're going to process a lot of food, you're better off with the food processor. I can make razor thin slices of onion with a mandoline that I'd never get from a food processor. Control vs. efficiency.
Does anyone know how much better this one is than Serious Eat's favorite, also an OXO (OXO Good Grips V-Blade Mandoline Slicer), and sells for $46 on Amazon?

omg. There's a video on the product page of a woman demonstrating the recipe for baked eggplant. Is the best recipe. She used this mandalin to slice the eggplant 1/8" thin

For roughly the same price (or can be found cheaper) the Benriner mandolines are the way to go. I see them all the time in professional kitchens and I really like mine. The blade can be removed so you can sharpen it too.

Really suggest to get a cut glove. Injuries with these are no joke.
Quite a few people reporting dull blades, etc.
