You can put it on a chicken cutlet too, but tonkatsu sauce is a katsu sauce, and a katsu sauce can go on a pork cutlet. It is totally fine and correct to call it a tonkatsu sauce.

The most popular Tonkatsu sauce people (Bulldog) say this:

You'd be far more like a tonkatsu sauce by making a four ingredient version with apple sauce, malt vinegar, ketchup, and oyster sauce. If you added a fifth ingredient, five spice could get some of those spice flavors. Or, you could just buy this.
