To shoot 4k60, you basically have to go into APS-C crop mode. So 4k60 for real estate work, for example, requires you to use a crop sensor lens ultra wide like the Sigma 10-18 f2.8. When doing this, you are using a smaller cropped section of the sensor and the grain is larger/more prominent, counteracting a lot of the reason we would want to go full frame in the first place.
In other words, if you need to shoot 4k60, you're basically dealing with a crop sensor camera and not a full frame. For this reason, I have not yet gotten away from Canon for my full frame camera work (coming from a guy who's primary workhorses are a pair of Panasonic GH6's).
If you return part of an amazon bundle like this, is that a way to get an even better price on the camera with kit lens?
Not sure I would, but might consider going for another prime lens (35mm instead of 85mm) if that works.
