I feel the better route to go now is smart switches, but since I have a few rooms already with bulbs, I'm tempted here to get another 12-16 to finish up the larger main rooms of the house

I think they are the 2700k non tunable. Those are called white ambiance.
With home assistant do you have to use their hub, or can you use the integration with just a zigbee stick? I've always used standard zigbee bulbs. Used hue once with smart things, but it did not work well.
You can use your own zigbee dongle. I've not tried it yet, but this thread has more information. However, it doesn't seem like there's much advantage to doing that as you should still get local control even with the hue hub.

Regardless, if interested, you can circumvent the system by installing a slightly older version of the Hue app so that it can't force you to log in. I'm also finding the older app is more reliable, go figure.
