I don't think most people have problems playing one song. Sonos subs are filled with these comments and turns out to be network related. It's not only about the router there can also be interference in your building or other reasons.
Trust me if people could not play one song on these speakers they wouldn't sell and everyone would bash them

I got one today at the Marina del Rey/Venice Costco on Washington. They had a few in stock as of 2PM

But apples whole HomeKit AirPlay ecosystem is beyond trash. It's gotten worse rather than better. It's frankly insane given their position and wealthy
I've had two sets of stereo HomePods and for the last year, despite different WiFi access points and routers, I can't get through a single song without them cutting out. A single HomePod usually works fine.
I finally disconnected them and switched to Klipsch Fives in my office and Nines in the living room. These can be had for $450 (Fives) and $1k (Nines) if you shop around - that's the pair, not each
I used to dream of filling my homes with $199 HomePods and now that it's here.... it's a huge no thanks

I have four HomePods and very rarely have any issue with connectivity. Also they are never out of sync with each other when playing something in multiple rooms.

You don't need eARC as some have said, ARC will do.
I'm don't know about getting audio from bluray/xbox, you'll have to do additional research. Although since they're referencing ARC, it would seem that you could.
But it will require an AppleTV.
I have all 3… in single AND as stereo pairs. the Echo is an inferior product and doesn't belong among these 3 as far as sound and music goes.
As for the Sonos One vs HomePod… my preference is the HomePod… by a far margin. But that's me. Both comparing as a single speaker and/or as stereo pairs. Much better bass. Just sonically sounds better… to me. But sound/music interpretation is subjective.
The bonus with the HomePod is IF you have an Apple TV 4K, you can use as TV speakers as well. With the Sonos One, it can only be used as TV speakers as a surround ONLY and ONLY if you have a Sonos Soundbar like Arc or Beam. My daughter has HomePods connected to her Apple TV. I'm actually blown away how well they sound for TV speakers. I have the Sonos Arc with sub and Play: 1's for surround. Is the Sonos system better? Absolutely. But only because of the surrounds… if you can add even HomePod Minis for surround to the HomePods, that would be a more fair comparison notwithstanding cost.
Edit: I have the Echos in stereo pair. I do have the Echo Show 5… either way, still inferior for music
But, seriously, the 'never call' rule of SD does not apply to Costco, as their employees don't hog all the good deals for themselves. If you call just one Costco, they will even be able to check if any other location near you has the item in stock. Those guys are very helpful.
