I'm very interested in this form factor and this seems to be the best in specs so far at a <$300 price point. Curious if anyone is able to help answer these questions:
What mac mini generation would this most closely resemble? Comparable to M1? Is this a good alternative?
Would this be good for basic photo editing and large excel spreadsheets? Seems like that's where 32gb ram would help but not sure about DDR4 vs DDR5 and the impact there.
Assuming this will connect fine with a NAS system? (Preordered the Ugreen NAS box but I'm a newbie here)

I'd say this. (Unless you got all other apple products, which Mac Mini will have great seamless integration experiences. e.g. iCloud etc.)

Do you want a Mac, with integration with everything iPhone (Photos, News, Music, Chat, etc.) or do you want Windows? That's the key question; figure that out then figure out the rest.

This is cheap for what it is - a basic PC in a tiny box. For Plex server (plus PlexPass) type stuff, it's very fast.

This, Passmark: 3400 / 17200

M1 Mini: 3700 / 14200
M2 Mini: 3900 / 15500

See previous response. It's about the speed of an M1 or M2 Mac; slower in SC and faster in MC. It's probably noisy as heck compared to the silence of the Apple hardware, and I wouldn't bet the vendor would be in business in a year or two, but the core hardware is decent (Intel) stuff.

At the low end, DDR4 vs DDR5 simply doesn't matter; I wouldn't worry about it.

I can't see how your clients would influence your NAS choices at all; anything connects to anything over ethernet...
