You do realize that maíz has always been a staple of cuisine in Mexico and Pan de Elote and Pan de Maíz are traditional Mexican dishes? Corn was first domesticated in present day Mexico about 10,000 years ago and cornbread dishes in mesoamerican cultures date back thousands of years.
Mexico is also further south than the "southerners" you're referring to. So perhaps you should be asking if Mexicans moved north to the "south" and brought corn with them. And the answer would be yes. That's how corn came to what is now the United States (though that was still thousands of years before European settlers came to North America).
